I have recently received a mincer attachment for my beloved KitchenAid (www.kitchenaid.com) and I have been very enthusiastically mincing meat away on it. It is great to make your own mince mixes or just mincing that chicken breast to make pasta sauce instead of yet another chicken fillet (not that there is anything wrong with that)
In this recipe I used a mix of turkey breast and chicken breast. If you don’t have a mincer just ask your butcher to do one for you. As this is a burger you can also just use minced beef. The “white meat” option is much lower in calories and I find that in our house there is a little too much red meat consumption. I want to be at a place where the red meat is a rarity not a daily thing. I struggle because, as I am, my kids are meat eaters. Some days I worry they will bite my hand off if I don’t give them some red meat.. I joke of course.
When I prepare burgers or wraps, I tend to have a plate of ingredients ready to go, so everyone can pick and choose and assemble their own burger or wrap. It makes it fun and caters for everyone’s taste.
What you need:
- 500 gr Turkey Mince & 300 gr Chicken Mince, mixed well together
- 1 large onion, grated
- 3 cloves of garlic, grated
- 1 big handful of parsley, finely chopped
- 1 large egg
- 1 tsp chili powder
- 2 tsp cumin
- 2 tsp sweet paprika
- 2 tsp salt & pepper to season
for the filling:
- 6 large or 12 mini good quality burger buns
- 1 medium onion, sliced
- 1 ripe avocado, sliced
- 6-12 rashers of bacon and/or sujuk
(my friends and my Turkish readers know what I mean– but you can discover it here – http://en.wikipedia.org/wiki/Sujuk — or just pay a visit to your local Turkish deli)
- 2-4 gherkins, sliced
- few radishes, sliced
- 2 medium tomatoes, sliced
- few lettuce leaves
- squeeze of mustard, tomato sauce and mayonnaise to your taste

What you do:
- Mix all the ingredients well
- Make large 5-6 large beef patties or 10-12 little ones (depending on your taste)
- Once the patties are ready place them in the fridge to rest for about 20-30 minutes
- While the patties are resting prepare the rest of the ingredients
- Then get your grill ready!
- The patties need to rest another 5 minutes once you take them out of the fridge before you place them on the grill
- Make sure the grill is very hot
- Place the patties on the hot pan/grill – they need about 3-4 minutes on each side
Please note: if they are thicker than the ones in the photo add another minute on each side — or reduce by a minute if they are smaller.The main thing to know is the meat should come off the grill easily when it is cooked. That can be your indicator that it is ready to be turned
