I am desperate to introduce more vegetarian dishes to my weekly food planning. I am new at this so, I find the pastry (pie/tart/log) option a safe and delicious option.
So far I have only used store bought pastry but I am hoping to summon the courage to make my own one of these days (please submit recipes if you have a good, sure one)
This recipe goes really well with a green salad with red cabbage, turnip and light dressing of your choice.

What you need:
- 1 large Courgette
- 1 large Red Peppers (sweet)
- Hand full of Parsley (chopped roughly)
- Feta (150 grams)
- 1 sheet of pastry (2 if you fill each lightly)
- 1 egg yolk for the egg wash
- 1 teaspoon of sesame seed (optional)
What you do:
Two very important points to note:
- Drain the feta if it too wet to avoid a soggy bottom on your pastry
- Do NOT add any salt as the salt from the feta is sufficient for the entire mix)
Then:
- Grill the courgette with a splash of olive oil
- Grill the peppers lightly
- Mash the feta in a bowl
- Add the parsley
- Once all mixed, chop and add the veg


How to prepare the pastry?


Leaving the centre untouched, cut strips on each side of the pastry
Fill the middle and then start your latticework
Egg wash the pastry and splash on the sesame as you like it
Serve it up with your choice of green salad
