I love a good roasted chicken. At our house Wednesday night is roast chicken night. I look forward to it but, my family, who have had their fair share of roasted chicken, need a bit of variation so, I have come up with this simple recipe.
Rice, pilav or wild rice is a nice side dish for this recipe… Although I am happy with it as it is.

What you need:
- 1 broccoli
- 1 bulb of fennel
- 2-3 3oast potatoes (you can roast along with the chicken)
- 2 tomatoes
- 3-4 shallotts
- 1-2 cloves of garlic
- 1 tsp paprika and/or chili flakes
- 1 tbs olive Oil
You can use any vegetable you like, I chose broccoli, as my kids love it, and roasted potatoes (which you can roast along with the chicken.
A simple and delicious! dish for a Wednesday.
What you do:
- Lightly cook your veg. Blanche or steam the broccoli
- Potatoes are already roasted
- Add olive oil, garlic, shallots and chilli flakes (or sweet paprika – if spicy is not your thing) in a pan.
- Once the shallots are done, add the chicken pieces, a quick mix, get all the flavours to cover the chicken
- Add your veg & tomatoes
- Bit of salt & pepper to season.
Just like that, dinner is ready!
