Salmon & Avocado Salad

This is a little dish that almost all of my friends have had at one point or another at my house. A variation is you can also use prawns instead of salmon or together if you make a big salad to go with it.

Its delish! factor is its simplicity. All the flavours work well together and it is a “fancy” dish too. First time I prepared it was for a New Year’s Eve dinner party and everyone loved it.

What you need:

  • 8-10 slices of Smoked Salmon – About 300 gr (I prefer the Scottish salmon but it is up to you)
  • 1 Gem Lettuce – finely cut
  • 2 Ripe Avocados
  • Handful of Dill (not too much, as it can overpower)
  • Juice of 1 Lemon
  • 1 tsp chilli flakes
  • 2 tbsp olive oil
  • Salt & Pepper to season

What you do:

  1. Cut the salmon fillets into nice strips
  2. Cut the Gem lettuce very fine
  3. Place the salmon and the lettuce in a large bowl
  4. Chop and add the dill to the mix
  5. Add 1/2 the olive oil and the lemon juice
  6. Add seasoning and mix – leave aside
  7. Peel and chop the avocado
  8. Place in a separate bowl
  9. Add the chilli flakes & season
  10. Add the olive rest of the olive oil and the lemon juice and mix gently

If you want to present it like I did, you will need one of those cook moulds but if you don’t have one. don’t worry you can make a nice salad and place the avocado & salmon on top or just take a small bowl, place the salmon mix on the bottom. Then add the avocado mix and turn the bowl upside down on a plate and there you have it! A dome of salmon & avocado salad. You can serve it on rye toast as well as salad.
