Carb Free Leek & Chicken Pizza

Food is an important part of my day. I need a warm dinner, Just a salad or a sandwich for dinner does not appeal to me unless it’s an exceptionally hot summer’s day. The only problem is I still want to watch my weight and cleanse my body of carbs once in a while. I am a true carb addict so finding new ways to eat carb free is a real treat. I had a few messages from my Instagram followers asking for carb free recipes and this old recipe came to mind. It needs only a few ingredients and it super easy to make.

This pizza is very popular with my family, especially on the days where we had a big breakfast or lunch. This is a very light dinner option. One thing I have to warn you about is that, if you put too much cheese it will not taste very good. The cheese will over power everything and since there is no dough to soak it up it will taste bland.

What you need:

  • 4 leeks (only the white part) cut into halves
  • 250 gr of chicken chunks stir fried
  • 2 red peppers (you can used the pickled red peppers if you like – they add a tang to the dish)
  • 1 tbsp sweet chili powder
  • 1 tbsp olive oil
  • Salt & pepper to season
  • 1/2 of grated cheese (gruyère)

What you do:

  1. Line your oven proof tray with foil or baking parchment
  2. Cut the leeks cut into halves and lay it down on a the tray
  3. Drizzle the olive oil on the leek and season with salt and pepper
  4. In a separate bowl:  Mix the chicken and the red peppers and the chilli powder
  5. Layer the mix on the leek  and sprinkle on the cheese
  6. Cook in the oven 180 for about 35-40 mins.

Once cooked it is ready to be devoured
