Asparagus & Parmesan

SCRUMPTIOUS SALADS WEEK / RECIPE 1

This is a no-mess no-fuss recipe. All you need is Asparagus, gem lettuce, peas, mint leaves and some Parmesan.

The truth is I made a tarte and these were the left over ingredients, instead of overloading my tarte, I decided to make a salad with a little bite to it. I have to admit, it is now my favourite side dish.

What you need:

  • 4-6 Asparagus, raw
  • 1 Gem lettuce, finely cut
  • 2 tbsp FPeas (frozen is fine)
  • Hand full of mint leaves
  • 2 tbsp Parmesan, grated
  • Juice of 1/2 a Lemon
  • 1 tbsp Olive oil
  • Salt & pepper to season

What you do:

  1. Cut the raw asparagus into 3 pieces, or sliced them length wise
  2. Blanche the peas, let them cool
  3. Add the gem lettuce, asparagus and the peas in a bowl
  4. Throw in a few mint leaves
  5. Squeeze half a lemon juice
  6. Splash a dash of olive oil
  7. Season to taste
  8. Add half the freshly grated Parmesan
  9. Mix well and then add the other half of the Parmesan
