Radish, Feta and Chives Salad

SCRUMPTIOUS SALADS WEEK / RECIPE 4

I used to eat salads all the time and often used the same ingredients with only the protein changing. Recently I decided I wanted to try things I wouldn’t normally use for a salad, or eat. As part of trying new vegetables, I made this radish salad one day, the chives and the feta were a late addition to my “trials”.

I absolutely love this salad and I find it goes really well with any grilled meat, rice or just on its own. I hope you will find the flavour combination pleasing.

What you need:

  • Lettuce, I used iceberg but you can use any kind you prefer
  • Red radishes, head, and tail chopped off and very finely sliced
  • Feta, (Bulgarian or Greek works best) cut into cubes  (If you don’t like feta you can use mozzarella or labne instead)
  • Chives (spring onions), chopped finely
  • Juice of half a lemon
  • 1 tbsp olive oil
  • Salt & pepper to season

What you do:

  1. Mix all ingredients, except the feta
  2. Add the olive oil & the lemon juice
  3. Mix well
  4. Season with salt
  5. Add the feta (the reason for adding the feta later is that if you add it at the beginning two things will happen, the feta will crumble and soak up all the dressing making the rest of the salad bland)
  6. Season with pepper
  7. Mix well & serve
