Cabbage & Green Apple Salad

SCRUMPTIOUS SALADS WEEK / RECIPE 5

Cabbage is my new ingredient of choice when it comes to salads these days. Not only because it adds so much more taste to a salad it is also because a cabbage goes along way.

This salad is great to make since all you need is three ingredients. A green apple for the sourness, some spring onions for sharp flavour and of course apple cider vinegar and lemon juice for sharpness. You can’t go wrong. You can pair it with a sandwich (as I did) or any type of grilled meat. If you can get your hands on some tofu, it is a delicious accompaniment to fried spiced tofu.

What you need:

  • 1/3 of a white cabbage, finely sliced/shredded
  • 1/2 green apple (granny smiths), cored and finely sliced
  • 2 spring onions, finely sliced
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • Salt & pepper to season

What you do:

  1. Mix the cabbage and the green apples in a bowl
  2. Add the apple cider vinegar, lemon juice, olive oil and the salt in a small bowl, whisk well (making a vinaigrette)
  3. Pour the vinaigrette over the cabbage and apple, mix well
  4. Now sprinkle the spring onions over the salad and mix just once
  5. Season with pepper
