Splendid Tomato Soup

Tomato soup with a twist. Twist being the sun-dried tomatoes and garlic addition to the classic tomato soup.. And a bit of child labour my boy Tuan decided to help with the cooking today. He said “mummy everyone knows what soup looks like, take a photo of me instead”. So here he is having a go at making soup. He loves it! Get your kids in the kitchen and give them little jobs, they will love it.

Here is a delicious and healthy soup (also vegan)  You are getting all of the nutritional benefits of tomatoes, such as high concentrations of the antioxidants lycopene, beta-carotene, vitamin A and vitamin C.

Just a tip: If you plan to freeze some of it, do it without the cream (or vegan yogurt), Defrost and reheat until piping hot, then stir in the cream (or vegan yogurt) before serving.

If covered and chilled in the fridge, this dish can be made up to 3 days ahead.

WHat you need:

  • 6 – 8 sun-dried tomatoes in oil
  • 2 garlic cloves, sliced
  • 1 medium onion
  • 6-8 medium size tomatoes, quartered
  • 1 x 400g tin chopped tomatoes (optional)
  • 3 – 4 medium size potatoes, quartered
  • 500ml vegetable stock
  • 1 tbsp sugar
  • 150ml double cream (or vegan yogurt)
  • salt and freshly ground black pepper

What you do:

  1. Set a large, deep pan over a medium heat and add 1 tbsp of oil from the sun-dried tomatoes
  2. Add the onion and stir for a few minutes, or until it just starts to colour, before adding the garlic. Keep stirring for a few more minutes
  3. Add the sun-dried tomatoes (skin off) and mix until it really blends with the onions and the garlic
  4. Now add the potatoes and mix again
  5. Add the fresh tomatoes, tinned tomatoes (if using), stock and sugar and bring to the boil,
  6. Stirring constantly, season with salt and freshly ground black pepper, then cover with the lid,
  7. Reduce the heat and simmer for 10-15 minutes
  8. Remove from the heat and, using a hand blender, blend the soup in the pan.
  9. Stir in the cream (or the vegan yogurt) and season with salt and freshly ground black pepper before heating through
  10. Serve with a a slice of toast or your favourite sandwich
