Goat’s Cheese, Bacon & Green Apple Bagel

This sandwich combination is close to my heart, I made it for our first picnic date with my husband (some 17 years ago). It was a beautiful spring day and we had gone to Chateau de La Hulpe in Brussels for an afternoon in the sun. At the time bagels were not as readily available as they are today. so we had it in a baguette. I still believe this combination is best served with a toasted bagel but any bread with a bit of crunch would do this combination justice. The bacon is a bit of an issue for some, but, if it is an issue and not something for you, opt for turkey bacon ir vegan bacon. It is the salty crunch against the soft and sweet goat’s cheese that we are after. The taste of the green apple is the nice surprise too.

What you need:

  • Soft goat’s cheese
  • Bacon bits (or turkey or vegan bacon), cooked
  • 1/4 green apple, sliced thin
  • 1 tsp butter
  • 1 bagel or 1/4 baguette, lightly toasted

What you Do:

1- Toast the bagel / baguette lighlty

2- Butter the bagel then add the slices of goat’s cheese (or spread you may be using)

3- Add a layer of bacon

4- Add a layer of green apple
