Spinach, Fennel & Mango Salad

“HERO” WEEK/ SPINACH / RECIPE 2

Spinach is the “hero” of this week’s dishes. Whenever I have some spinach at home get try to make a few family favourites. This salad is one of those, even though my son doesn’t like mango, he eats this without complaint. It couldn’t be simple to make, so this is going to be a very short recipe.

. You need, spinach, fennel and mango. Olive oil and lemon juice for the dressing and you’re good to go. It couples very well with any grilled meat, poultry or fish. Add some lemon jest to the dressing if you’re feeling fancy 🤩 et bon appétit ✨

WHAT YOU NEED:

  • 3 cups of spinach, chopped roughly
  • 1 mango, sliced thin
  • 1 fennel, sliced thin
  • Juice of 1/2 lemon (and the rind to make jest)
  • 1 tbsp olive oil
  • Salt & pepper to season

WHAT YOU Do:

  1. Prepare all the ingredients as listed
  2. Add all the ingredients in a salad bowl
  3. Place the olive oil, lemon juice, salt, pepper and the lemon jest in a small bowl, mix well
  4. Add the vinaigrette on to the salad, mix well
  5. Serve with any grilled fish, poultry or red meat
