The natural sweetness and luscious flavour of this scrumptious pumpkin dessert is what will have you craving it. It is very popular and a staple on festive days. Pumpkin is baked in its very own juice with sugar and the result is an exquisite dessert with the full flavour of pumpkin. This lovely light dessert couples well with crushed walnuts. . You can also add a few cloves or cinnamon sticks to its juice before baking if you’d like to spice up this dessert.
What you Need:
– An ovenproof roasting bag
– 1,5 kg of pumpkin, peeled and chopped into large cubes
– Enough sugar to cover the pumpkin, between 1-to-2 cups
– 1 bark of a cinnamon
– 100 gr of walnuts, chopped coarsely
– ½ cup of tahini (optional)
What you Do:
1) Preheat your oven to 180 degrees
2) Add the pumpkin to the oven proof roasting bag
3) Place on a baking tray
4) Even out the pumpkin in the bag and then add 1 cup of sugar
5) Make sure to cover all the pumpkin with the sugar, add another ½ a cup if needed
6) Do not add more than 2 cups of sugar
7) Place the cinnamon stick in the centre of the pumpkin mix
8) Tie up the roasting bag and make two small incisions to allow air flow in the bag
9) Place in the oven and cook for about 40 minutes
10) Once cooked carefully remove the pumpkin in a dish with a lid, Discard the cinnamon stick
11) Collect all the juice in the bag into a saucepan and cook on high heat for a few minutes until it takes a sauce like consistency
12) Do not leave it on too long otherwise, it will become hard and will be unusable
13) Once the sauce is ready, pour it over the pumpkin
14) Add the walnuts and a drizzle of tahini to serve
