Artichoke Hearts with Fava Beans

This is a recipe I (re)discovered at a friend’s place few years ago.  although there were only a handful of us, there was a mountain of food on the table. This is the one that stuck with me. Perhaps, because I love artichokes or the complex flavour it carries with addition of fava beans. It really pack a lot of flavour. The ingredients are easy to get, you can use frozen too and it cooks in only 15 minutes, so it is a winner in my eyes.

I must admit I made some additions to the original recipe, simply because I like to play with ideas as I cook.

This recipe was a favourite amongst my cooking workshop participants. They loved the simplicity of it.

It may be worth to note that this recipe uses frozen products. If you use fresh produce the prep and cooking time will change.

What you need:

  • 6-8 artichoke hearts
  • 2 cups fava beans
  • 1 cup peas
  • 2 carrots, peeled and chopped finely/cubed (optional)
  • 2 large tomatoes, peeled, chopped into large chunks
  • 2 red onions, halved and sliced thinly
  • 3 garlic cloves, chopped finely
  • Few stems of fresh dill
  • 1/2 tsp chilli flakes
  • 1 tbs lemon juice
  • 1-2 tbs olive oil
  • Salt & pepper to season

What you do:

  1.  Wash all the frozen vegetables under warm water and set a side
  2.  Add the grape-seed oil to the pan
  3.  Fry the onions with a 1 tsp of salt and the chilli flakes until soft and then add the garlic
  4.  Once the garlic is looking golden add the fava beans and the peas
  5.  Stir all the ingredients for about 2-3 minutes
  6.  Add the tomatoes and 1 tsp of pepper, stir gently
  7.  Add the artichokes face down and pour the lemon juice over the dish
  8.  Close the lid, and cook for about 15 minutes
  9.  At 15 minutes, check the artichokes with a fork, if it goes feels soft, you are ready to serve
