Fruity Mini Cheese Cakes

With all the Covid-19, self isolation and constant health updates, we have had a strange spring. And now that the summer is almost here (on this half of the planet) we are finally enjoying some relaxed rules and everyone seems a little bit more calm. It is great to be socialise again as it signals “return to normal” for all.

The sun has been phenomenal in Belgium this spring and as a result, we are finally enjoying some gorgeous fruits from our city garden.

As it was the first time I was going to have guests (a couple of girlfriends and their daughters) I wanted to make something special. Of course the rasberries my son picked the day before was a great inspiration.

We seem to eat less when the weather is warm so, there is room for more desserts. This lovely, no-bake cheesecake dessert is easy to prepare, and is really delicious accompanied by fresh berries.

This recipe makes about 8 serves in a short glass. If you use a tall glass you will need to double the ingredients or just make  4 serves.

What you need:

  • A packet of digestive biscuits (12-13 biscuits) or speculoos biscuits (Belgian Christmas biscuits)
  • 400 gr cream cheese
  • 1 cup icing sugar, sifted
  • 50 gr butter, melted
  • 2 Tbsp caster sugar
  • 4 Tsp fresh lemon juice
  • 3 Tsp milk
  • 4 cups whipped cream (or cool whip)
  • 100 gr Fresh berries, strawberries (chopped), blueberries, blackberries (You can also use mango, passion fruit or any fruit you may enjoy)

What you do:

1st:  Make the digestive biscuit crumble

  1. Preheat the oven at 250 degrees
  2. Crush the biscuits in a large plastic bag
  3. Pour the crumbs, sugar and melted butter into a bowl
  4. Stir until fully combined
  5. Pour into an oven proof tray or dish
  6. Make sure to press it down to get an even layer
  7. Bake at 250 degrees  for 10 minutes, until it is lightly brown
  8. Leave it to cool while you prepare the cheesecake

2nd:  Make the cream cheese mix

  1. Add the cream cheese in a bowl and then mix with an electric mixer until it is smooth (don’t over mix)
  2. Add the icing sugar to the cheese
  3. Add the milk and then the lemon juice and mix well until it fully combined
  4. Fold in the freshly whipped cream (or coolwhip) into cream cheese mixture.

3rd:  Assemble

  1. Layer a spoonful of the crumble
  2. Spoon the cheese mix into dessert dishes (or use a piping bag)
  3. Add a layer of chopped strawberries, then add more cheesecake, fresh blueberries and a blackberry to decorate
