White Pizza…

A taste of summer on a rainy day…

Today is particularly miserable, rainy day in Brussels. This is only November, I trust there are more of these to come so, I am hoping to keep my mood elevated via food… Never fails.
For the family lunch I decided to prepare a pizza inspired by my lovely Irish friend Caroline, a strict vegetarian, who showed me that you can have more than mushrooms on a pizza.

I call this a “white pizza” because it doesn’t have the traditional tomato sauce base. The base is very lightly sprayed with extra virgin olive oil for a little kick but the real flavour comes from the asparagus. My favourite snack.

What you need:

  • 1 pizza dough (I used a store bought one)
  • 1 tbsp olive oil mixed with 1/2 tbsp dry oregano
  • 2 tbsp roughly grated Parmesan
  • 2 tbsp grated Mozzarella
  • 2 shallots thinly sliced (make rings of the tiny onion)
  • 4-6 asparagus
  • 3-4 small tomatoes, skinned and quartered

What you do:

  1. Place the dough on baking tray
  2. Brush the olive oil and oregano mixture around the edges of the pizza dough
  3. Add the Mozzarella and the shallots
  4. Add the asparagus
  5. Place the tomatoes as you like (not too many as you don’t want the pizza to be too wet)
  6. Add the Parmesan on top and you are ready to go
  7. Bake for about 15-18 minutes and enjoy!
