Lemon & Herb Butter Chicken

Hello again,

After a long break, we are back with “Chicken Week”.  I like chicken in many forms but my favourite way is roasted chicken.  For me, the classic Sunday roast is not lamb roast like we had at our house growing up, but it is a chicken roast.  Since my family is not as enthusiastic as I am about roast chicken, I try and add a bit of variety to the way I roast it.  This is why this recipe is a favourite of mine.  I make it with extra drumsticks because my family prefers the leg and we don’t want any fights at the dining table over who gets the leg.  This is also a way to get leftovers and use that chicken breast for a pie or pasta sauce.

You can serve this with Turkish Rice (https://cuizzine.wordpress.com/2013/12/10/turkish-rice-pilav/), roasted vegetables and or a salad.

What you need:

  • 1 full chicken
  • 4 chicken drumsticks (optional)
  • 100gr butter
  • 2 lemons, peeled and sliced
  • 1 tbs of mixed dried herbs (oregano, rosemary, parsley)
  • 1 tbsp sweet paprika, to dust the chicken
  • Salt & Pepper to season
  • 1 extra large oven baking bag (you can use an oven proof dish and cover it if you do not have the baking bags)
  • 1 tbs plain flour (for the baking bag)
  • kitchen string to tie the chicken

What you do:

  1. Clean the chicken to your liking
  2. Preheat the oven to 220 degrees
  3. Mix the butter with the herbs, make a paste you can use
  4. Using your hands, lift the skin of the chicken to create a space to insert the herb butter and the lemon slice
  5. Follow the butter with the slice of lemon and pull the skin over 1-delish-roast-chicken-veggie-tray-bake2-dsc_33543-dsc_3363
  6. Please note that the skin of the legs will tear and that is ok, it will not dry out the chicken, the butter will keep it moist
  7. Tie the legs of the chicken together to help in keep its shape while roasting
  8. Do the same with the drumsticks
  9. Season the chicken and dust it with the sweet paprika
  10. Place the flour in the baking bag, shake the bag around to coat it with the flour
  11. Place the chicken in the bag and tie it.
  12. You need to make a couple of tiny holes in the bag so that the air can escape and keep the bag from bursting
  13. Cook in the preheated oven for 45-55 min

    Thanks for the recipe, my chicken dishes were not very tasty and dry in general. So I will definetly try your lemon&herb seasoning!
